Mushroom Filling
- 2 tbsp olive oil
- 14 oz baby button mushrooms (400g), sliced
- 2 garlic cloves, minced
- 1 medium red onion, sliced
- Salt and black pepper to taste
Spicy Yogurt Dip
- 5 oz Greek yogurt
- 1 garlic clove, minced
- 1/2 tsp chili flakes
- 1/2 tsp dried thyme
Wrap
- 6 Wholemeal Weight Watcher tortilla wraps
- 1 cup baby spinach
- 2 medium tomatoes, sliced
- 1 chili, sliced
Instructions
- Heat 2 tbsp of olive oil in a skillet over medium heat.
- Add the mushrooms, minced garlic, and sliced red onion. Continuously mix and sauté for about 10 minutes.
- Once the mushrooms are fully cooked and browned around the edges, add salt and black pepper to taste. Remove from heat.
- In a bowl, mix the Greek yogurt, minced garlic, chili flakes, and dried thyme to make the spicy yogurt dip.
- Spread the tortilla wraps. Place baby spinach slightly off-center, then top with tomato and chili slices. Add the mushroom mixture and drizzle with the spicy yogurt dip.
- Gently roll up the wrap and cut it in half before serving.
