Instructions:
Prepare the Dough:
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture becomes light and fluffy.
- Add the pumpkin puree, egg, and vanilla extract, then mix until well incorporated.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cream of tartar, salt, cinnamon, nutmeg, cloves, and ginger.
- Gradually combine the dry ingredients with the wet ingredients, mixing just until everything is blended. The dough should be soft and slightly sticky.
Chill the Dough:
- Cover the dough and refrigerate for at least 30 minutes, or up to 24 hours. Chilling the dough not only makes it easier to work with but also enhances the flavor.
Preheat the Oven:

Shape the Cookies:
