These keto zucchini boats are incredibly flavorful, delicious, and satisfying. They’re a perfect meal for maintaining ketosis while ensuring sufficient protein intake. Each boat contains just 5.6 grams of net carbs.

Ingredients

  • 3 medium zucchini
  • 1 lb pork mince
  • 1 small white onion or ½ large onion finely chopped
  • 1 jalapeno sliced
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 cherry tomatoes diced
  • 1 1/2 cups mozzarella shredded

Instructions

  1. Preheat the oven to 350°F and oil a baking tray.
  2. Wash the zucchinis and cut each in half lengthwise.
  3. Scoop out the middle of the zucchinis with a spoon and chop the scooped-out portion.
  4. Heat a pan over medium heat, add the chopped zucchini and onions, and cook until soft.
  5. Add the pork mince, jalapeños, paprika, cumin, garlic powder, onion powder, and oregano to the pan.
  6. Cook the mixture until the pork is fully cooked, stirring continuously.
  7. Once fully cooked, drain the pork in the pan and season with salt and black pepper. Stir in the tomatoes and let the mixture simmer for another 2-3 minutes.
  8. Stir in 1 cup of mozzarella cheese.
  9. Place the zucchini halves on the baking dish or sheet and spoon in the meat mixture.
  10. Top each zucchini boat with the remaining mozzarella cheese.
  11. Bake in the oven for 30 minutes. Serve hot.
