Ingredients:
4 large bell peppers, any color of your choice
1 pound (450g) of ground sausage (Italian or your preferred variety)
1/2 pound (225g) of ground beef
1 cup (100g) of shredded mozzarella cheese
1/2 cup (50g) of grated Parmesan cheese
1/2 cup (75g) of pepperoni slices, chopped into small pieces
1/2 cup (75g) of sliced black olives
1/2 cup (75g) of diced tomatoes (either canned or fresh, well-drained)
1/2 cup (75g) of diced onions
1 garlic clove, minced
1 teaspoon of dried oregano
1 teaspoon of dried basil
Salt and pepper, to your taste
2 tablespoons of olive oil
1/2 cup (125ml) of pizza sauce (optional, low-carb or homemade)
Fresh basil for garnish (optional)
Directions:
Step 1: Preheat the Oven: Set your oven to 375°F (190°C) to start warming up.
Step 2: Prepare the Bell Peppers: Slice off the tops of the bell peppers, then remove the seeds and inner membranes. If necessary, trim the bottoms slightly to help them stand upright.
Step 3: Cook the Meat Mixture: Heat olive oil in a large skillet over medium heat. Add the ground sausage and beef, cooking until browned and crumbling it with a spoon. Add the minced garlic, diced onions, oregano, basil, salt, and pepper. Continue cooking for 2-3 minutes until the onions are soft.
Step 4: Combine Ingredients: Mix in the diced tomatoes, black olives, and pepperoni. Cook for an additional 2 minutes. Remove from heat and stir in 1/2 cup of shredded mozzarella and 1/4 cup of grated Parmesan.
Step 5: Stuff the Peppers: Arrange the bell peppers in a baking dish. Fill each pepper with the meat mixture, pressing it down gently. Sprinkle extra shredded mozzarella and grated Parmesan on top.
Step 6: Bake: Cover the baking dish with foil and bake for 25 minutes. Remove the foil and continue baking for another 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden brown.
Serve: Allow the stuffed peppers to cool slightly before serving. Garnish with fresh basil if desired.
Tips:
- Low-Carb Pizza Sauce: For an extra burst of pizza flavor, drizzle a little low-carb pizza sauce over the peppers before baking.
- Vegetable Additions: Feel free to include additional low-carb vegetables, like mushrooms or spinach, in the meat mixture.
Enjoy these keto-friendly stuffed peppers, packed with all the deliciousness of a supreme pizza!
