Ingredients:

- 1 cup of beef or chicken broth (preferably homemade or low-sodium)
- 1 cup of cauliflower rice
- 1 cup of shredded cheese (cheddar or mozzarella)
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- 1/2 teaspoon of smoked paprika
- Salt and pepper to your liking
- 2 tablespoons of olive oil
- Fresh parsley or basil for garnish (optional)
Instructions:
Prepare the Meat:
- In a large pot or Dutch oven, warm the olive oil over medium heat.
- Add the chopped onion and sauté until it becomes soft, about 3-4 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes.
- Add the ground beef or turkey to the pot. Cook until it’s browned, breaking it apart with a spoon as it cooks. Drain any excess fat if needed.

- Bring the soup to a boil, then lower the heat and let it simmer for about 15-20 minutes, or until the bell peppers and cauliflower rice are tender.
Add Cheese:
- Stir in the shredded cheese until it’s fully melted and well incorporated.
Serve:
- Ladle the soup into bowls and garnish with fresh parsley or basil if you like.
