- 1/4 cup melted butter

- 1/2 cup sour cream

- 2 large eggs
- 1 teaspoon vanilla extract
- 8-10 keto-friendly chocolate sandwich cookies (like keto Oreos), crushed
Instructions
Preheat the Oven:
Set your oven to 325°F (163°C). Prepare a muffin tin by lining it with paper liners or using a silicone muffin pan.
Prepare the Crust:
In a mixing bowl, combine almond flour, erythritol, and melted butter. Stir until fully mixed. Press the mixture evenly into the bottom of each muffin tin cup to create the crust.
Use the back of a spoon or a flat-bottomed glass to press it down firmly. Bake for 8 minutes, then remove from the oven and allow it to cool slightly.
Prepare the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese until it becomes smooth and creamy. Add sour cream, erythritol, eggs, and vanilla extract.
Continue beating until the mixture is well combined and smooth. Gently fold in the crushed keto-friendly cookies.
Assemble:
Spoon the cheesecake filling over the partially baked crusts in the muffin tin. Smooth the tops with a spatula.
Bake:
Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the centers are set and the edges are lightly golden.
Turn off the oven and leave the cheesecakes inside with the door slightly open for 1 hour. This helps prevent cracking.
Chill:
After the hour, take the cheesecakes out of the oven and let them cool to room temperature. Refrigerate for at least 2-3 hours, or overnight, to allow them to firm up.
Serve:
Remove the cheesecakes from the muffin tin and peel off the paper liners if used. Enjoy chilled!
