- 1 cup finely chopped cabbage
- 1/2 cup finely chopped carrots (optional, as they are slightly higher in carbs)
- 1/4 cup finely chopped mushrooms
- 1/4 cup chopped onions
- 2 cloves garlic, minced
- 2 tbsp soy sauce or coconut aminos
- 1 tsp ground black pepper
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp ginger powder or 1 tsp freshly grated ginger
- 1/4 cup chopped green onions (optional)
For the Wrapper:
- 1 cup almond flour
- 2 large eggs
- 2 tbsp psyllium husk powder
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/4 cup water (adjust as needed)
For Frying:
- Coconut oil or avocado oil
Instructions:
1. Prepare the Filling:
Heat a small amount of oil in a large skillet over medium heat. Add garlic and onions, sautéing until they become translucent. Introduce ground pork (or your preferred meat) and cook until browned. Mix in cabbage, mushrooms, and carrots (if using) and cook until vegetables are tender. Incorporate soy sauce (or coconut aminos), salt, pepper, and ginger, cooking for an additional 2-3 minutes. Remove from heat and let cool slightly.
2. Make the Wrapper:
In a medium bowl, combine almond flour, psyllium husk powder, salt, and baking powder. Add eggs and water, mixing until a dough forms. Adjust water as needed to achieve a dough-like texture. Divide the dough into small portions, rolling each between two sheets of parchment paper until thin. Roll to a size that’s convenient for wrapping.
3. Assemble the Lumpia:
Cut the rolled dough into squares or rectangles, sized to fit a portion of the filling. Place a small amount of filling in the center of each wrapper. Fold the sides of the wrapper over the filling and roll tightly. Seal the edges with beaten egg or a little water.
4. Fry the Lumpia:
Heat oil in a skillet over medium heat. Fry the lumpia in batches until they are golden brown and crispy on all sides, about 3-4 minutes per side. Remove and drain on paper towels.
5. Serve:
