Ingredients
For the Cake:
- 4 large eggs
- 1/4 cup of almond flour
- 1/4 cup of unsweetened cocoa powder
- 1/4 cup of erythritol or your preferred keto-friendly sweetener
- 1/2 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1/4 cup of unsalted butter, melted
- 1 teaspoon of vanilla extract
For the Filling:
- 1 cup of heavy cream
- 2 tablespoons of erythritol or another keto-friendly sweetener
- 1/2 teaspoon of vanilla extract
Instructions
Oven Prep:
Start by preheating your oven to 350°F (175°C). Line a 10×15-inch baking sheet with parchment paper and lightly grease it.
Making the Cake Batter:
First, separate the egg whites from the yolks in a large bowl. Beat the egg whites with an electric mixer or stand mixer until they form stiff peaks.
In another bowl, whisk the egg yolks with erythritol until they become light and fluffy. Stir in the melted butter and vanilla extract.
In a separate bowl, mix together almond flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the yolk mixture.
Then, carefully fold in the beaten egg whites, trying to keep the batter airy.
Baking the Cake:
Pour the batter onto the prepared baking sheet, spreading it out evenly. Bake for 10-12 minutes, or until the cake is set and a toothpick inserted into the center comes out clean.
Cooling the Cake:
Take the cake out of the oven and let it cool in the pan for a few minutes. Lay a clean kitchen towel on a flat surface and lightly dust it with cocoa powder.
Gently turn the cake out onto the towel, peel off the parchment paper, and let it cool completely.
Whipping Up the Filling:
In a medium bowl, whip the heavy cream with erythritol and vanilla extract until stiff peaks form.
Assembling the Roll Cake:
Once the cake has fully cooled, evenly spread the whipped cream filling over the surface.
Carefully roll the cake from one end, using the towel to help you shape it into a tight roll. Transfer the rolled cake to a serving platter.
Serving:
Chill the cake in the refrigerator for at least 30 minutes before slicing. For a finishing touch, you can dust it with a little extra cocoa powder before serving.
