- 1 tbsp tomato paste
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper (adjust to taste)
- 2 tbsp olive oil or avocado oil
- Optional: 1/2 cup of shredded cheese (for topping)
Instructions:
Cook the Meat:
- In a large pot or Dutch oven, heat olive oil over medium heat.
- Sauté the chopped onion until it becomes translucent, approximately 5 minutes.
- Stir in minced garlic and cook for an additional minute.
- Add ground beef or pork, breaking it apart with a spoon, and cook until browned. Drain excess fat if needed.
Add the Vegetables:
- Mix in shredded cabbage and cook for about 5 minutes, until it begins to soften.
Add the Liquids and Seasonings:
- Incorporate diced tomatoes, tomato paste, beef or chicken broth, paprika, oregano, basil, salt, and pepper.
- Stir well to combine all ingredients.
Simmer:
- Bring the soup to a boil, then lower the heat and let it simmer for 20-30 minutes, or until the cabbage is tender.
Serve:
- Taste and adjust seasoning as needed.
- Serve hot, optionally topped with shredded cheese if desired.
Tips:
- For added flavor, consider adding a bay leaf while simmering; remember to remove it before serving.
- For a thicker soup, blend part of the soup with an immersion blender or in a regular blender (let it cool slightly first).
