Ingredients:
For the Donuts:
- 1 ½ cups of almond flour
- ¼ cup of coconut flour
- ¼ cup of granulated erythritol or your preferred keto sweetener
- 1 teaspoon of baking powder
- ¼ teaspoon of salt
- 2 large eggs
- ¼ cup of unsweetened almond milk (or any low-carb milk alternative)
- 2 tablespoons of melted coconut oil or butter
- 1 teaspoon of vanilla extract
For Frying:
- Coconut oil, enough to fill a pan with about 1-2 inches of oil
For the Glaze (optional):
- ¼ cup of powdered erythritol
- 1-2 tablespoons of heavy cream
- ½ teaspoon of vanilla extract
Instructions:
Prepare the Donut Dough:
Start by combining the almond flour, coconut flour, erythritol, baking powder, and a pinch of salt in a medium-sized bowl.
In a separate bowl, whisk together the eggs, almond milk, melted coconut oil (or butter), and vanilla extract until well combined.
Gradually mix the wet ingredients into the dry ingredients, stirring until you achieve a thick and smooth dough.
Shape the Donuts:
Place the dough on parchment paper or a silicone mat, and roll it out to about ¼-inch thickness.
You can also use your hands to shape the dough if you prefer. Use a donut cutter, or improvise with a round cutter and a smaller one for the center hole.
No donut cutter? A glass for the outer ring and a bottle cap for the center work just as well.
Heat the Oil:
Pour coconut oil into a deep skillet or frying pan and heat it over medium heat until it reaches about 350°F (175°C).
To test if the oil is ready, drop a small piece of dough into the oil—if it bubbles and floats to the top, you’re good to go.
Fry the Donuts:
Gently place the donut shapes into the hot oil, making sure not to overcrowd the pan. Fry each side for about 1-2 minutes, or until they turn golden brown and develop a crispy exterior.
Remove the donuts with a slotted spoon and let them drain on a paper towel-lined plate to soak up any excess oil.
Prepare the Glaze (Optional):
To make a glaze, whisk together powdered erythritol, 1-2 tablespoons of heavy cream, and a splash of vanilla extract in a small bowl. If the glaze is too thick, adjust the consistency by adding more cream.
Glaze the Donuts (Optional):
Once the donuts have cooled, either dip them into the glaze or drizzle it over the top, depending on your preference.
