- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup powdered erythritol
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3 large eggs
- 1/4 cup melted butter
- 1 tsp vanilla extract
Instructions:
- Prepare the Ladyfingers
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt.
- In another bowl, whisk together the eggs, melted butter, and vanilla extract until well blended.
- Gradually add the wet ingredients to the dry mixture, stirring until smooth.
- Pipe or spoon the batter onto the baking sheet, shaping them into ladyfingers.
- Bake for 10-12 minutes, or until the ladyfingers are golden and firm.
- Let them cool completely before using.
- Make the Mascarpone Cream
- In a large bowl, whip the heavy cream until stiff peaks form.
- In a separate bowl, mix together the mascarpone cheese, powdered erythritol, and vanilla extract until smooth.
- Gently fold the mascarpone mixture into the whipped cream until fully combined.
- Assemble the Tiramisu
- Mix the cooled coffee with coffee liqueur or almond extract, if using.
- Quickly dip each ladyfinger into the coffee mixture (be careful not to soak them too long).
- Arrange a layer of dipped ladyfingers at the bottom of a serving dish or individual glasses.
- Spread half of the mascarpone cream over the ladyfingers.
- Add another layer of dipped ladyfingers, then top with the remaining mascarpone cream.
- Smooth the top with a spatula.
- Chill and Serve
- Refrigerate the tiramisu for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set.
- Before serving, dust the top with unsweetened cocoa powder.
- Enjoy your delicious homemade keto tiramisu!
