Ingredients:
- 4 bone-in, skin-on chicken thighs
- Salt and pepper
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1/2 cup chicken broth
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon butter
- 1/4 cup heavy cream
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 375°F.
- Generously season the chicken thighs with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, place the chicken thighs skin-side down and cook for 5-6 minutes until golden brown.
- Flip the chicken thighs and cook for an additional 2-3 minutes.
- Remove the chicken from the skillet and set it aside.
- In the same skillet, sauté the garlic and mushrooms for 2-3 minutes until the mushrooms are tender.
- Pour in the chicken broth and add the chopped thyme. Stir to combine.
- Return the chicken to the skillet, skin-side up. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through and the skin is crispy.
- Take the skillet out of the oven and stir in the butter until melted.
- Add the heavy cream and stir, letting the sauce simmer for a few minutes until it thickens.
- Garnish with chopped parsley and serve hot.
