Ingredients:
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced (choose your favorite variety)
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon dried thyme (optional)
- 1 cup shredded cheese (cheddar, mozzarella, or a blend of both)
- 4 large flour tortillas
- Salt and pepper, to taste
- Cooking spray or additional olive oil for brushing
Instructions:
Preheat the Oven: Set your oven to 400°F (200°C) to preheat.
Cook the Vegetables:
- Warm the olive oil in a skillet over medium heat.
- Add the sliced mushrooms and cook them for around 5 minutes, until they start to soften.
- Toss in the chopped spinach and cook until wilted, approximately 2 minutes.
- Season with garlic powder, onion powder, dried thyme (if using), and salt and pepper. Stir well and remove from heat.
Assemble the Quesadillas:
- Place 2 tortillas on a parchment-lined or lightly greased baking sheet.
- Sprinkle some shredded cheese on one half of each tortilla.
- Evenly spread the spinach and mushroom mixture over the cheese layer.
- Add another sprinkle of shredded cheese on top.
- Fold the tortilla in half, covering the filling.
Bake:
- Lightly brush the tops of the quesadillas with cooking spray or a touch of olive oil.
- Bake in the preheated oven for 10-12 minutes, or until the tortillas are golden brown and the cheese is melted and bubbly.
Serve:
- Remove from the oven and allow the quesadillas to cool for a minute or two.
- Cut them into wedges and serve warm. Pair with salsa, sour cream, or your favorite dipping sauce. Enjoy!
